Day 3 - Barb

OK, like I said, I'm not officially starting until tomorrow but I did go shopping today and stocked up on whole grains, beans, and fruit and vegetables. I made a big pot of Tuscan Vegetable Soup (with white kidney beans) to take to work this week. I cut up a bag of raw veggies. I made chick pea patties (kind of like a cross between hummus and falafels that are baked in the oven) to take as a tasty snack with lunch. I cooked up quinoa and barley to add to my soups or salads this week. And I made a meusli, dried fruit, plain yogurt mix to eat for breakfast tomorrow, as well as an additional container to have an an after school snack since I won't be getting home until later tomorrow night. I think I'm ready!
